Strawberry Oatmeal Breakfast Bars


This morning I was searching for a recipe that I could make for breakfast using oats and my overripe strawberries. I ran into Krista’s blog @, and her amazing strawberry oatmeal bars.

If you know anything about me, you know that I never follow recipes, I make everything with my own twist! I am so excited to share my inspired recipe, which turned out to be an amazing breakfast.

I found this recipe to be extremely easy to prepare, kid friendly to make, and almost suspiciously easy to clean up!

Prep + Cleaning Time: 10 mins | Cook Time: 50-55 mins | Approx. 8 servings


Crust & Crumble:

  • 1/3 cup unsalted butter, melted

  • 1 1/2 cups white, unbleached flour

  • 1 1/2 cups large flake oats

  • 2/3 cup honey or brown sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • pinch of salt

Strawberry Middle:

  • 3 1/2 cups of sliced strawberries

  • 1 teaspoon of cornstarch OR white, unbleached flour

  • 2 tablespoon of honey or brown sugar

I love how little hands helped, and I was able to capture the moment.


  1. Preheat the oven to 350

  2. Line a 9 x 11 pan with parchment paper or lightly grease. I chose to lightly grease with the remaining butter that I melted for this recipe.

  3. Add all of the crust & crumble ingredients into one bowl. Mixture should be a little crumbly, and not 100% incorporated! Make sure to take 1 cup of the mixture and set aside. This will be the crumble for on top!

  4. Add all of the strawberry middle into a separate bowl, and fully mix!

  5. Press the crust & crumble mixture into the bottom of the pan. Don’t be afraid to really push down, and ensure it is spread evenly.

  6. Evenly spread the strawberry mixture overtop of the pressed crust.

  7. Sprinkle the cup of remaining crumble over the strawberries.

  8. Bake breakfast bars for about 50 minutes, or until the crisp is the desired crispiness.

  9. Let sit for 10 minutes to cool before serving.
