3 Ingredient Healthy Pancakes

Nothing frustrates me more than finding a healthy, “easy” recipe that calls for $300 in extremely odd ingredients. We choose to eat genuine real, easy foods. Healthy shouldn’t be a complicated process.
These pancakes are 3 simple ingredients, and have the availability to add any spices or flavours to customize to your liking.
1 ripe banana
1/2 cup of oats
cinnamon + vanilla extract
coconut oil/ butter for pan
Bend banana, oats, egg, and optional spices in a blender. If you do not own a blender, be sure to mix extremely thoroughly. There should be no banana chunks, and every ingredient fully incorporated.
Heat non- stick pan on medium to medium low heat, with or without coconut oil or butter.
Pour approximately palm sized circles of pancake mixture onto pan.
Flip pancakes when golden brown. It is normal for the top of the pancake to lightly bubble.
Pancakes are ready once both sides are golden brown.
Add peanut butter, jam, maple syrup, or honey as a toping. I choose natural peanut butter!
Add any extra desired fruit! I chose frozen raspberries, and they melted with the heat of the pancakes.
Quick note: I have easily double, tripled, and quadrupled this batch and either refrigerated appropriately, or froze for easy breakfast options.
